Roasted Tomato and Spinach Meatloaf
Ingredients:
- 1 cup fresh parsley
- 2 cloves garlic
- 650g good quality finely ground beef
- 1 egg
- 1/2 cup dried breadcrumbs
- 2 tbs Tall Poppy Gourmet Classic Spicy Tomato Relish
- Ground salt and pepper a few sprinkles for seasoning
- 150g baby spinach leaves
- 1/2 cup large cherry or cocktail toamtoes approximately 3
Method:
- Preheat oven to 180c and line a loaf pan with baking paper
- Chop parsley and peel and mince garlic, place in a large bowl
- Add beef mince, egg, breadcrumbs, Classic Spicy Tomato Relish and salt and pepper. Mix Well with a spoon for approximately 5 minutes or until mixture becomes sticky.
- Press half the meatloaf mixture into the base of a loaf pan. Make a shallow well along the length of the mix and firmly press in the baby spinach leaves. Press remaining mince mixture over the top, encasing the spinach completely.
- Arrange the tomatoes on the top, firmly pushing the tomatoes into the meatloaf, leaving about 1/4 of the tomato showing. Bake for 35-40 minutes or until cooked. Allow to cool for 10 minutes before turning out.
