Roasted Tomato and Spinach Meatloaf

Ingredients:

  • 1 cup fresh parsley
  • 2 cloves garlic
  • 650g good quality finely ground beef
  • 1 egg
  • 1/2 cup dried breadcrumbs
  • 2 tbs Tall Poppy Gourmet Classic Spicy Tomato Relish
  • Ground salt and pepper a few sprinkles for seasoning
  • 150g baby spinach leaves
  • 1/2 cup large cherry or cocktail toamtoes approximately 3

 

Method:

  • Preheat oven to 180c and line a loaf pan with baking paper
  • Chop parsley and peel and mince garlic, place in a large bowl
  • Add beef mince, egg, breadcrumbs, Classic Spicy Tomato Relish and salt and pepper. Mix Well with a spoon for approximately 5 minutes or until mixture becomes sticky.
  • Press half the meatloaf mixture into the base of a loaf pan. Make a shallow well along the length of the mix and firmly press in the baby spinach leaves. Press remaining mince mixture over the top, encasing the spinach completely.
  • Arrange the tomatoes on the top, firmly pushing the tomatoes into the meatloaf, leaving about 1/4 of the tomato showing. Bake for 35-40 minutes or until cooked. Allow to cool for 10 minutes before turning out.
  • Serve with extra Classic Spicy Tomato Relish
